Ingredients:
125g butter, chopped
2/3 cup brown sugar
1 tbsp honey
1 ½ cups rice bubbles or other puffed grain (wholegrain if possible)
1 cup rolled oats
½ cup plain flour
½ cup desiccated coconut
½ cup coarsely chopped dried apricots (or other dried fruit e.g. craisons)
½ cup coarsely chopped nuts (substitute seeds: pepitas and sunflower seeds for nut-free option)
Method:
makes approximately 24 small squares suitable for a snack. Please note that these are quite energy dense, and very filling so stick to small portions.
