Muesli-bar slice

Ingredients:
125g butter, chopped   
2/3 cup brown sugar
1 tbsp honey   
1 ½ cups rice bubbles or other puffed grain (wholegrain if possible)
1 cup rolled oats   

 

½ cup plain flour
½ cup desiccated coconut   
½ cup coarsely chopped dried apricots (or other dried fruit e.g. craisons)
½ cup coarsely chopped nuts (substitute seeds: pepitas and sunflower seeds for nut-free option)


Method:

  1. Preheat oven to 160˚C, line slice tin.
  2. Combine butter, honey and sugar in a small saucepan and heat (medium), stiring until ingredients combine, put aside.
  3. Put remaining ingredients in a large bowl, add butter/sugar mixture and stir to combine.
  4. Press mixture firmly into prepared slice tin.
  5. Bake for 25-30 minutes or until golden.
  6. Cool in pan before cutting into bars or squares.

makes approximately 24 small squares suitable for a snack. Please note that these are quite energy dense, and very filling so stick to small portions.
