Mini Oat & Fruit Muffins

Ingredients:
1½ cups flour   
½ cup rolled oats
4 tsp baking powder
1 tsp cinnamon   
½ tsp Salt

½ cup caster sugar   
100g butter, melted
1 cup milk   
1 egg, lightly beaten
2 cups frozen mixed berries (or other fruit e.g. chopped apple including skin)   


Method:

  1. Sieve all dry ingredients into a large bowl.
  2. Mix wet ingredients together.
  3. Gently stir everything together, including the fruit, very gently with a wooden spoon, making sure you do not over mix.
  4. Drop spoonfuls of the mixture into paper cases or greased muffin tin if freezing.
  5. Cook in a 220ºC oven for 12 - 15 minutes.
  6. Cool on wire rack.

Makes 24 small muffins, suitable to freeze.
